    Application in food: Many kinds of food are added with xanthan gum as stabilizer, emulsifier, suspending agent, and thickening agent. Xanthan gum can control the rheological property, structure, flavor and appearance of food and its pseudo-plasticity can ensure the good texture of food. Therefore, it is widely applied in salad dressing, bread, dairy products, frozen food, beverage, seasoning, brewage, sweets, pastries, soup bases, and canned food. In recent years, people from developed countries have become and more and more concerned about the excessive caloric value in food that may lead to obesity. Xanthan gum clears such concern because it is non-degradable in the human body. According to a report from Japan in 1985, a comparative test shown that xanthan gum is the most effective carcinostatic agent among the eleven food additives tested.
